"Ki" that I enumerate here is "Ki" of cheerness, "Ki" of vigor and "Ki" of atmosphere.
It is because of the desire in the restaurant that these three "Ki" is extremely important.

Especially, the majority of the evaluation of the shop are decided for the one shot customer with the impression when entering.
Afterwards, if the first impression is bad even if it cooks very good, and good service is provided, I can get only the evaluation of "Moderation" because the poor impression becomes a starting point.
I think, the one and this that greatly controls the first impression are "Ki".
